Ahi Poke Bowl from Duffy’s Sports Grill

Summer, especially in Central Florida, needs some chilled foods (and strong air conditioning) to make it bearable.

A poke bowl is just the thing to cool you off. It contains raw fish along with vegetables and rice.

Duffy’s Sports Grill’s Corporate Executive Chef Eric Parker stopped by the Orlando Sentinel Test Kitchen to show me how to make a poke bowl.

Ahi Poke Bowl from Duffy’s Sports Grill
4 ounces Ahi Tuna, cubed
Poke sauce
Avocado
Sliced scallions
2 cups cilantro-lime rice
Toasted sesame seeds

Ladle 1 ounce of Poke Sauce over 4 ounces of Ahi Poke cubes in a plastic bag and let rest for 3-5 minutes under refrigeration.

Meanwhile, cube ¼ of an avocado and place in a bowl.

Place 1 soupspoon full of sliced scallion in the bowl.

Fill a bowl with 2 white scoops of cilantro-lime rice.

Dump marinated Poke Cubes into bowl with a big pinch of toasted sesame seeds.

Toss gently and place on top of the rice bowl.

Finish with a pinch of sliced scallion and a pinch of toasted sesame seeds.
